Beginner Sourdough Bread: The Schedule, the Cues, and the Failure Points
A beginner sourdough loaf built around observable cues instead of clock worship: a 70% hydration dough, practical fermentation schedule, shaping guidance, and failure diagnosis.
Sourdough bread becomes much less mysterious when you stop asking the clock to do the starter’s job. Time matters, but fermentation speed changes with starter strength, dough temperature, flour, hydration, and room temperature. A four-hour bulk rise in one kitchen can be a six-hour rise in another.
This loaf is designed as a first serious sourdough: enough water for an open, tender crumb, but not so much that shaping feels like trying to fold a puddle.
The formula
Makes one medium loaf: 500 grams bread flour; 350 grams water, divided; 100 grams ripe active sourdough starter; 10 grams fine salt.
This is a 70% hydration dough before accounting for the starter’s flour and water. It is wet enough to develop a flexible crumb but firm enough for a beginner to shape without specialty tricks.
Step 1: use starter at a predictable moment
Feed your starter and use it when it has risen substantially, is aerated throughout, and smells cleanly fermented. The exact number of hours depends on the feeding ratio and temperature. If the starter has barely moved, the bread schedule is already compromised.
If your starter is still new or erratic, build consistency first. Keep the starter workflow separate from the loaf workflow: record feeding time, room temperature, and peak time so you know what your culture actually does. Both pieces belong under Recipes & Technique, but the bread should not pretend a weak starter is ready.
Step 2: mix and rest
Mix 500 grams bread flour with 330 grams of the water until no dry flour remains. Cover and rest 30 minutes. This short rest hydrates the flour and begins gluten development before salt tightens the dough.
Add 100 grams ripe starter, 10 grams salt, and the remaining 20 grams water. Squeeze and fold the dough until the starter and salt are evenly incorporated. The dough may feel slippery at first; keep folding until it becomes cohesive.
Step 3: folds are structure, not punishment
During the first two hours of bulk fermentation, perform three sets of stretch-and-folds about 30 to 40 minutes apart. With wet hands, lift one side of the dough until you feel resistance, fold it over itself, rotate the bowl, and repeat around the dough.
Each set should leave the dough smoother and more elastic. Stop aggressively folding once the dough holds shape and fermentation is producing visible gas. Late rough handling simply knocks out the structure you waited for.
Step 4: bulk fermentation ends by cues
After the final fold, leave the dough covered until it is noticeably expanded, aerated at the edges, smoother on top, and slightly domed rather than dense and flat. For many kitchens this may take roughly 4 to 7 hours from initial mixing, but temperature can move that range in either direction.
Do not wait automatically for a full doubling. In a warm kitchen, that can push the dough into over-fermentation before shaping. Think “lighter, gassier, and clearly expanded,” not “must hit a line because a video said so.”
Step 5: pre-shape, rest, final shape
Turn the dough onto a lightly floured counter. Use a bench scraper to round it gently into a loose ball. Let it rest uncovered 15 to 20 minutes.
For the final shape, flip the dough so the smooth side is down. Fold the lower third upward, fold the sides inward, then roll the top toward you to create tension. The goal is a taut outer skin without tearing the dough.
Place seam-side up in a well-floured banneton or a towel-lined bowl dusted with rice flour and wheat flour. Cover.
Step 6: cold proof
Refrigerate the shaped dough for 8 to 16 hours. Cold proofing firms the dough for scoring and gives the baker a civilized schedule: shape at night, bake in the morning.
Step 7: bake with trapped steam
Place a Dutch oven with its lid in the oven and heat to 475°F for at least 30 minutes. Turn the cold dough onto parchment, brush away excess flour, and score the top with one decisive slash about 1/2 inch deep.
Lower the loaf into the hot Dutch oven. Cover and bake 20 minutes. Reduce the oven to 450°F, remove the lid, and bake another 20 to 25 minutes until the crust is deeply browned. If your oven runs hot, lower the temperature sooner rather than settling for a pale interior wrapped in burnt crust.
Cool the loaf completely—ideally at least 90 minutes—before slicing. The interior is still setting as steam redistributes. Cutting immediately can make a properly baked loaf seem gummy.
Failure diagnosis
Dense loaf with little oven spring: suspect weak starter or under-fermentation first. A new starter that rises slowly cannot be bullied into lifting bread by extending the bake.
Flat loaf that spreads: possible over-fermentation, weak shaping tension, or dough that was too wet for the flour. Fermentation and structure both matter; adding more bench flour during shaping rarely fixes a dough that has already gone too far.
Huge tunnels under the crust with dense crumb below: often a sign of under-fermentation or uneven shaping. The goal is distributed gas, not one dramatic cave.
Gummy crumb: cool the loaf fully before judging. If it is still gummy after cooling, look at underbaking, excessive hydration for the flour, or under-fermentation.
Make the schedule serve dinner
A good sourdough workflow should fit the rest of the kitchen. If the loaf has to share oven time with dinner, map that conflict through Menus & Kitchen Systems. Bread is not exempt from equipment capacity just because it has a starter.
