Salty & Clever

The Shop

Tools that do the arithmetic behind feeding people: quantities, cold space, oven traffic, the bar, and a runbook that survives the last twenty minutes.

Salt Notes · Kitchen Systems

Somebody finally did the arithmetic

Cooking for twelve is not cooking for four with the numbers multiplied. Somewhere between the two, the recipe stops being the hard part and the kitchen starts being the hard part — and no recipe you own will mention it, because every recipe is written as though it were the only thing you were cooking that day.

These are the tools for the rest of it. Each one is a single file that opens in your browser, works with no internet, and cannot be taken away from you.

In season nowThe Thanksgiving Command Center — the whole meal already loaded, the three dishes that will not fit on one oven named in advance, and the list of what to cut when you are half an hour behind. Worth buying in October, when there is still time to move something. $29

Shop by the job

Start with the problem

“Sixteen people are coming and I have no idea what to buy.”The Number — quantities by the shape of the evening, and the yield table that explains why hosts run out of the main. $19“One oven, six dishes, everything hot at seven.”Traffic Control — it works backwards from the serve time and tells you which dish does not fit, and what to do about it. $19“There is nowhere in the refrigerator to put any of this.”The Cold Problem — shelf area rather than cubic feet, because none of it stacks. Plus the ice, which is mostly not for glasses. $9“Cocktails for thirty, without standing at a shaker for three hours.”The Number — bottles, glassware, zero-proof, and batching with the dilution water counted as an ingredient. $19“The whole Thanksgiving, on one oven, and I would like to sit down at some point.”The Thanksgiving Command Center — the meal already loaded, the conflicts named, and the cut list for when you are behind. $29“Plan the whole evening once, properly.”The Host’s Operating System — all of it wired together, plus a runbook that tells you what to cut when you are behind. $49“I want the numbers on paper, in the kitchen.”The Field Manual — twenty-one printed pages, generated from the same code the tools run on. $12

What you actually receive

A file. Double-click it and it opens in your browser — nothing installs, nothing phones home, and nothing you type in it leaves your computer. No account, no subscription, no server that has to still exist in four years.

That is deliberate. What people resent about digital products is that they rot. If you paid for it, it should not be possible to take it away.

The free tools stay free

Nothing was taken off the site to make room for a price tag. The calculators answer the question; the products do the work — they organize it, combine it, schedule it and print it.

Everything, and what it costs

Priced by what it is worth on one use rather than by page count. The Host’s Operating System contains all four tools and the manual, so there is nothing above it to upsell you — it is the top of the ladder, not the middle.
