A recipe for four is not a recipe for eighteen with the multiplication done correctly. What to multiply and by how much, how many pans it needs, how many batches at the stove, and when the honest answer is a different dish.

What happens when this goes from four to eighteen

Multiplying the ingredient list is the part that works. Everything else about a recipe — the pan it fits in, the number of times you have to sear, whether the oven can hold it, how much of the afternoon it now costs — does not multiply, and that is where a good dish for four becomes a bad dinner for eighteen.

The arithmetic is correct and the evening is ruined. Those are not in conflict.

Why the seasoning does not scale straight

Four things in a recipe stop behaving when the batch gets big, and all four of them are the difference between a dish that scaled and a dish that survived.

Salt reads stronger in quantity. Partly because a large batch spends longer over heat and reduces further, partly because seasoning is judged against the last mouthful rather than the first. Scale to about eighty percent past four times, then salt the rest in at the end, where you can taste it. Salt is the easiest thing in cooking to add and the only one you cannot take out.

Heat compounds. Chili, black pepper, mustard, anything hot: the same proportion in a bigger pot lands hotter, and it keeps building as the dish sits. Three quarters, then taste.

A bigger pot evaporates less. This is the one that surprises people. A wide pan has a lot of surface for its volume; a deep pot has very little. So the same recipe scaled up loses a much smaller fraction of its liquid, and comes out looser and less concentrated than the original. Start braising liquid at around eighty percent, and hold back some of the thickener too — you will need less of it than the multiplication says.

Fat for searing does not scale at all. It scales with the pan, and the pan has not changed. Same film of oil, every batch, however many portions are going through it.

The pan is the recipe now

A portion of protein needs about thirty square inches of hot pan with air around it. A twelve-inch skillet gives you roughly ninety usable square inches, which is three portions. Not four, and definitely not six.

Crowding is not a compromise, it is a different cooking method. Wet food in a crowded pan drops the surface temperature below the point where browning happens, releases its water, and steams in it. There is no heat setting that fixes this and no amount of patience that rescues it — the pan is simply doing something else now.

So eighteen portions across one skillet is six batches, and six batches is about forty-eight minutes of standing at the stove. That is the real cost of the multiplication, and it is never in the recipe.

The move that buys the evening back

Sear in the afternoon. Cool it, hold it cold, and finish it in the oven or in the braise when people are in the house.

The crust survives this perfectly well — better than it survives being seared in a rush with the last batch going cold while the first waits. What you lose is the smell of searing at the moment guests arrive, which is worth something. What you gain is not being at the stove for the first forty minutes of your own party, which is worth more.

Almost every dish on this page has a version of that move. Braises and stews are frankly better the next day. Tray-roasted vegetables can go most of the way and get five minutes of heat at the end. Baked dishes assemble cold and hold. The exceptions are the things that are defined by being fresh at the moment of serving — a salad, a seared piece of fish, a risotto — and those are the dishes to keep small on purpose, or to serve as a first course for a number you can actually cook.

When the answer is a different dish

Sometimes the kitchen just says no, and it is better to hear that on a Tuesday than at five o’clock on Saturday.

If a dish needs four pans and you own two, and there is no second sitting and no borrowed pan, the honest answer is that this recipe is not the one for this number. That is not a failure of ambition. Every restaurant menu in the world is shaped by the same constraint; they just do it in advance and call it the menu.

The dishes that scale well are the ones where volume is an advantage: braises, stews, soups, big roasts, anything with a sauce, anything better the second day. The dishes that scale badly are the ones where the last thirty seconds are the whole point. Build the menu out of the first kind and put one of the second kind in it, small, for the moment people sit down.

Salt is the one ingredient that does scale cleanly, because it scales against the weight of the food rather than the number of people — which is why the salt calculator works in percentages instead of spoons.

Scaling for more people is one problem. Scaling for a different pan is the other one, and it happens far more often: the pan calculator works out how deep the batter will actually sit in the pan you own, and says so plainly when the swap is one you should not make.

The food on the table is one arithmetic; the board and the bar are the other two, and they fail in their own particular ways.
