What this is filtering, and what it is not

This index covers the recipes on this site that carry a full method and ingredient list. Essays that discuss several dinners at once, technique explainers and the pieces that describe a method in prose are deliberately left out, because they are not the thing you are looking for when you are standing in the kitchen at ten past six. If you are not sure which time to press, a weeknight has three shapes and picking one is faster than browsing.

The time filter is the honest weak point. Roughly two-thirds of these recipes state a total time or enough of a breakdown to add up; the rest never committed to a number, and rather than invent one for them, the filter simply sets them aside whenever you ask for a time. Filtering by main ingredient or by equipment keeps almost everything.
