The Cold Problem

“There is nowhere in the refrigerator to put any of this.”

What is in it

Refrigerator planning is treated everywhere as a volume problem. It is not. Covered party food does not stack — you cannot put a tray of assembled canapés on top of a bowl of dressed salad — so what runs out is shelf area under a usable height. A refrigerator two-thirds empty by volume can be completely full by that measure, which is exactly the experience of standing in front of an open door at four o’clock holding a sheet pan with nowhere to put it.

What it does

  • Packs what you are actually storing onto the shelves you actually measured, tallest first, and tells you what has nowhere to go and by how much you are short.
  • Names the moves that buy the space back. Every one is a shape change rather than a quantity change: the same food, occupying a different footprint.
  • Works out the ice in its three separate jobs — and most of it is not the job you were thinking of.
  • Tracks the conservative home-hosting time-out-of-refrigeration limit, including tempering and display time unless the food is being kept safely cold. USDA household guidance uses two hours at ordinary room temperatures and one hour above 90°F; professional foodservice rules are different and local code controls.

The finding that pays for it

Put the drinks in the refrigerator the night before, and buy the ice late with the bags kept shut. A typical eighty-pound ice order becomes about twenty. Neither move costs anything, and between them they are thirty to fifty dollars back on a single party — before you count not having a refrigerator crisis at four in the afternoon.

What’s free

The Bar Calculator stays free and sizes the drink side of the cold problem, and Every Number This Site Runs On keeps the underlying planning figures open. The Cold Problem maps the food onto the shelves you actually have, names what will not fit, and tells you which shape changes buy the space back while keeping the ice and food clocks in the same plan. The free pages give you the figures. This file solves the storage problem for your night.
