Ingredients
- 12 ounces linguine
- 2 pounds live clams, scrubbed
- 3 tablespoons olive oil
- 4 garlic cloves, thinly sliced
- 1/2 teaspoon red-pepper flakes
- 3/4 cup dry white wine
- 1/2 cup pasta water, plus more as needed
- 2 tablespoons unsalted butter, cold
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1/2 cup chopped parsley
Method
- Discard cracked clams and any live clam that does not close when tapped.
- Cook linguine in well-salted water until just shy of al dente. Reserve at least a cup of pasta water.
- Warm garlic and chile in olive oil until fragrant, not brown. Add wine and clams, cover, and cook until the shells open, 5 to 7 minutes.
- Move opened clams to a bowl. Discard any that stay closed. Add pasta and 1/2 cup pasta water to the pan and toss over medium heat until the liquor looks glossy and clings.
- Take the pan off the heat. Add butter, lemon zest, lemon juice, parsley, and the clams. Toss until the butter disappears into the sauce. Serve immediately, with bread if you have it, because someone will want the last of the liquor.
What goes wrong
