Ingredients

For the filling

  • 2 tablespoons olive oil
  • 1 1/2 pounds cremini or mixed mushrooms, finely chopped
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground coriander
  • 1 tablespoon soy sauce
  • 1 tablespoon sherry vinegar
  • 2 cups cooked brown or green lentils, well drained
  • 1 cup shredded smoked cheddar
  • 1/2 cup shredded sharp cheddar
  • 2 tablespoons chopped parsley
  • Kosher salt and black pepper

For assembly

  • 2 sheets all-butter puff pastry, thawed but cold
  • 1 large egg beaten with 1 tablespoon water
  • 1 tablespoon sesame seeds or flaky salt, optional

Method

  1. Brown the mushrooms: Heat a large wide skillet over medium-high heat. Add 1 tablespoon oil and half the mushrooms. Cook without crowding for 7 to 9 minutes, stirring only after they begin to brown. Transfer to a bowl and repeat with remaining oil and mushrooms.
  2. Build the base: Reduce heat to medium. Add onion with a pinch of salt and cook 6 minutes. Add garlic, tomato paste, paprika, thyme, and coriander; cook 2 minutes until the paste darkens.
  3. Dry the filling: Return mushrooms to the skillet. Add soy sauce and vinegar. Cook 4 to 6 minutes, stirring, until no liquid remains on the bottom. Fold in lentils and cook 2 minutes more. The mixture should mound on a spoon rather than slump.
  4. Cool fully: Spread filling on a tray and cool to room temperature. Fold in both cheddars and parsley. Taste for salt and pepper.
  5. Prepare the pastry: Heat oven to 425°F. Line a rimmed quarter-sheet pan or 9-by-13-inch metal pan with parchment. Roll one pastry sheet large enough to line the base and come slightly up the sides. Dock lightly with a fork.
  6. Fill: Spread the cold filling evenly, leaving a 3/4-inch border. Brush border with egg wash. Lay the second pastry sheet over the top, trim, and crimp the edges firmly.
  7. Vent and chill: Cut 8 small vents. Brush with egg wash and sprinkle with sesame or flaky salt. Chill 15 minutes.
  8. Bake: Bake 15 minutes at 425°F, then reduce to 375°F and bake 25 to 35 minutes more, until deeply browned on top and crisp underneath. A pale top means the bottom is not ready either.
  9. Rest: Cool 20 minutes before cutting with a serrated knife.

Make-ahead and service

If the pie is competing with other make-ahead dishes for refrigerator and oven space, run it through the Make-Ahead Holding Test before committing the whole menu.

The filling can be made three days ahead. The fully assembled unbaked pie can be refrigerated for 12 hours or frozen for one month. Bake from frozen at 400°F, adding 15 to 20 minutes. For buffet service, hold uncovered in a 225°F oven for up to 40 minutes so the pastry stays crisp.

Substitutions

  • Use cooked French green lentils for the firmest texture.
  • Replace smoked cheddar with smoked Gouda or sharp cheddar plus 1/4 teaspoon liquid smoke.
  • Add finely chopped walnuts for extra texture.
  • Use pie dough instead of puff pastry for a sturdier, less airy result.

Likely failure points

The bottom is soggy: The filling was warm or wet, the pan was glass, or the oven was underheated.

The pastry shrinks: It was stretched aggressively or not chilled before baking.

The slices fall apart: Lentils were too wet or the pie was cut before resting.

The filling tastes flat: Add vinegar and salt before adding more cheese.

Storage and reheating

Refrigerate for up to four days. Reheat uncovered at 375°F for 12 to 18 minutes. Avoid the microwave unless crisp pastry is no longer part of the plan.
