The One Drink and the No-Drink

Saffron-Honey Sidecar with Cognac

A Sidecar with saffron honey and brown-butter cognac. Eight threads is plenty, which is unwelcome news to anyone who has just seen the price of saffron.

Kitchen Kit
Gilded Alcove: Saffron, Honey, and Cognac Sidecar

Serve alongside
Salted pistachios and a small piece of hard aged sheep's cheese. Saffron and honey put a great deal of perfume in the glass, and salt and nut fat are what keep it from tipping into potpourri.

Tools
Shaker, jigger, fine-mesh strainer, a jar with a lid, and one coffee filter. A small skillet for the butter. If you are fat-washing, you also need freezer space for a jar overnight, which in most households is the genuinely scarce resource.

Ingredients · swaps in parentheses
Cognac, VS or VSOP (Armagnac for a drier, earthier drink), dry orange liqueur, fresh lemon, honey — clover or orange blossom (not buckwheat), saffron threads, orange bitters (cardamom bitters), a wide orange twist, unsalted butter if you fat-wash.

Magic
Fat-wash the cognac with brown butter. Brown 2 tablespoons of butter until it smells like toasted hazelnuts, stir it into 1 cup of cognac in a jar, leave it two hours at room temperature, then freeze it overnight. The fat sets into a solid disc you lift straight off; strain what is left through a coffee filter. What stays behind is nutty, faintly savory weight that makes honey taste less sweet and saffron taste more expensive. Not feeling brave? Brown the butter and whisk a teaspoon of it into the warm honey syrup instead. Smaller effect, ten minutes, no freezer negotiation.

Gotcha
Too much saffron turns metallic and medicinal, and once the syrup crosses that line you cannot pull it back with lemon or with more shaking. The only repair is dilution: stir in more plain honey syrup until the aroma returns to hay and flowers. Which means the fix for using too much saffron is to spend more honey. Start at eight threads.

Saffron is priced highly enough that people overuse it, on the reasoning that an ingredient costing that much ought to be audible from across the room. It should not be. In this drink, saffron works the way a picture light works: you notice what it is doing to everything else long before you notice the source. Eight to ten threads in a small jar of honey syrup, and it extends the orange and the oak instead of announcing itself as spice.

What it changes about a Sidecar

The classic is brandy, orange liqueur, lemon. This keeps that triangle and swaps part of the sweetness for saffron-infused honey, which gives a rounder texture than simple syrup does. The target is not a sweeter Sidecar. It should still open the appetite and still require slow drinking.

Specs

Makes: 1 drink. Active time: 8 minutes, plus 20 minutes for the syrup to infuse. Glass: chilled coupe, or a Nick and Nora if the room is warm.

  • 1 1/2 ounces cognac
  • 3/4 ounce quality orange liqueur
  • 3/4 ounce fresh lemon juice
  • 1/2 ounce saffron-honey syrup
  • 1 dash orange bitters
  • 1 wide orange twist

The pour, drawn to scale

  2. quality orange liqueur3/4 ounce
  3. fresh lemon juice3/4 ounce
  4. saffron-honey syrup1/2 ounce
Drawn to scale from the spec above. Garnish, ice and anything measured in dashes or drops are not shown — they change the drink without taking up room in it.

The syrup

Stir 1/4 cup honey with 1/4 cup hot water until smooth. Add 8 to 10 saffron threads and let it stand 20 minutes. Taste it. You want floral, hay-like, slightly earthy. Strain if you like, cool, and refrigerate in a clean sealed container up to one week.

Do not grind the threads chasing more color. Honey choice matters as much as saffron does: clover is mild and gets out of the way, orange blossom reinforces the citrus, and dark buckwheat honey will take the drink over entirely and never give it back. Taste the syrup before you build, because a strong honey may want only 1/3 ounce in the glass.

Method

  1. Chill the coupe thoroughly. There is no ice in the glass, so the glass is the refrigeration.
  2. Combine cognac, orange liqueur, lemon, saffron-honey syrup, and bitters in the shaker.
  3. Shake hard with solid ice for 12 to 15 seconds. Honey needs the dilution; under-shaken, this drink tastes sticky and hot.
  4. Double-strain into the cold glass.
  5. Express the orange twist over the surface, wipe the rim once, set it at the edge. Serve immediately.

No sugar rim

Plenty of Sidecars arrive with sanding sugar on the lip. Here it adds sweetness at exactly the point where the tongue first meets the glass and buries the saffron before anyone has had a chance to find it. Use a broad orange strip with as little pith as you can manage, and leave the rim alone. Offer a half rim for a guest who wants one, but do not make it the default.

Eight drinks

Combine 12 ounces cognac, 6 ounces orange liqueur, 4 ounces saffron-honey syrup, and 8 dashes orange bitters. Refrigerated, that holds two days. Add 6 ounces fresh lemon juice no more than two hours before service, then shake each 3 1/2-ounce portion with ice and strain.

Stir the batch before every pour. Honey syrup thickens when it is very cold and settles toward the bottom of the bottle, which produces four dry first drinks and four increasingly sweet last ones, and a host who cannot work out what changed. If the bar is going to be busy, pre-diluting and bottling the whole cocktail is a legitimate choice. A controlled bottled drink beats an overwhelmed bar producing eight different opinions about saffron.

The version without cognac

Oolong is the backbone here, and it holds up better than most substitutions do, because tannin and roast are genuinely what cognac was contributing. Shake 1 1/2 ounces strong chilled oolong, 1/2 ounce alcohol-free brandy alternative or unsweetened apricot tea, 1/2 ounce orange cordial, 3/4 ounce lemon, 1/2 ounce saffron-honey syrup, and one dash alcohol-free orange bitters. Double-strain into the same chilled coupe with the same expressed twist.

Thin on the finish? A teaspoon of verjus, or a more oxidized oolong. Too sweet? Cut the orange cordial before you touch the lemon. Note that honey means neither version is vegan, so if that matters at your table, test a substitution before the evening rather than during it.

At the table

Toasted almonds, chicken-liver mousse, aged Comté, citrus-cured salmon, small apricot pastries. Salt and richness give the honey something to do, and the lemon keeps the whole pairing from going dense. Skip the dense chocolate and the heavy smoke, both of which reduce saffron to a rumor.
