- 1 jalapeño, seeded if desired and finely chopped
- 4 scallions, thinly sliced

Method
- Make the brittle: Line a small tray with parchment. Cook sugar and water in a small saucepan over medium heat without stirring until deep amber. Remove from heat and whisk in butter. Immediately stir in toasted corn, then spread thinly on parchment and sprinkle with flaky salt. Cool completely and break into irregular shards.
- Cook the cornmeal: Heat oven to 375°F. Butter a 2-quart baking dish. Bring milk to a gentle simmer. Whisk in cornmeal slowly and cook over low heat for 5 to 7 minutes, stirring constantly, until thick and smooth.
- Season the base: Remove from heat. Stir in butter, salt, pepper, corn, jalapeño, scallions, cheddar, and baking powder. Cool 10 minutes.
- Add yolks: Whisk egg yolks into the warm—not hot—cornmeal base one at a time.
- Whip whites: Beat egg whites to medium peaks. Fold one-third into the base to lighten it, then fold in the remainder gently.
- Bake: Transfer to the dish and smooth the top. Bake 32 to 40 minutes, until puffed, golden at the edges, and barely set in the center. A slight wobble is correct; liquid movement is not.
