Ingredients

For the potato nests

  • 2 pounds russet potatoes, peeled
  • 1 small yellow onion
  • 1 large egg
  • 3 tablespoons all-purpose flour
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil, plus more for the pans

For the whipped ricotta

  • 1 cup whole-milk ricotta, drained if watery
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon olive oil
  • Pinch of kosher salt

For the pea relish

  • 1 cup frozen peas, thawed and patted dry
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped scallion
  • Kosher salt and black pepper

  • Mint leaves, pea shoots, or lemon zest

Method

  1. Prepare the pans: Heat the oven to 425°F. Generously oil two 12-cup metal mini-muffin pans, including the top surface around each cavity.
  2. Grate and dry: Coarsely grate the potatoes and onion. Wrap them in a clean kitchen towel and squeeze in batches until very dry. Then squeeze once more. Potato nests are not improved by hidden optimism about moisture.
  3. Mix: Combine the dry potato mixture with egg, flour, salt, black pepper, and olive oil. Toss until evenly coated.
  4. Shape: Divide among the 24 cups, using about 2 packed tablespoons per cup. Press firmly across the bottom and up the sides to create a shallow nest with an open center. Keep the edges reasonably even so they brown without burning.
  5. Bake: Bake for 20 minutes. Rotate the pans and continue baking for 5 to 12 minutes, until the edges and bottoms are deeply golden.
  6. Release: Rest for 5 minutes. Run a thin offset spatula or butter knife around each nest and transfer to a wire rack. Cool at least 5 minutes before filling.
  7. Whip the ricotta: Blend or beat ricotta, cream cheese, lemon zest, olive oil, and salt until smooth and airy. Transfer to a piping bag or covered bowl.
  8. Make the relish: Roughly crush about half the peas with a fork. Fold in the remaining whole peas, mint, lemon juice, olive oil, scallion, salt, and black pepper.
  9. Assemble: Pipe or spoon about 2 teaspoons whipped ricotta into each nest. Top with 1 teaspoon pea relish and finish sparingly with mint, pea shoots, zest, or Parmesan.

Texture standard

The nests should be crisp at the edges and firm enough underneath to lift in one piece. The ricotta should be smooth rather than grainy, and the relish should retain whole peas for visible freshness. Assemble only after the nests have stopped steaming; warm trapped moisture turns crisp potato into an edible coaster.

Likely failure points

The nests stick: The pans were insufficiently oiled or the nests were released while piping hot. Oil generously and rest 5 minutes.

The nests are soft: The potatoes were not squeezed dry, the cups were overfilled, or the pans are silicone rather than metal. Recrisp on a sheet pan if needed.

The edges burn before the bottoms crisp: The sides were pressed too thin. Use an even layer and rotate the pans.

The ricotta is grainy: It was not whipped long enough or was very dry. Add olive oil one teaspoon at a time.

The pea relish is watery: The peas were not dried or too much lemon was added. Drain briefly and fold in additional whole peas.

The nests soften after filling: They were filled while hot or held too long. Cool before filling and assemble in batches.
