Serve alongside
It is a dry apple drink at session strength, so it will sit next to almost anything for four hours — the job is to give people something salty and fatty to hold in the other hand. Pork crackling, a good sausage roll cut into three, whole radishes with cold butter and flaky salt, cheese straws, or a bowl of anchovy-stuffed olives. Nothing that needs a plate and nothing that drips, since everybody is standing on a working deck and half of them are in blacks.

A Cornelius or picnic keg with a good lid gasket, a CO2 bottle and a regulator you can actually read, a line and tap, and — the part that decides everything — somewhere that will hold two and a half gallons at 39°F or below overnight, because carbon dioxide dissolves far better cold and a base gassed warm is flat inside an hour whatever the gauge said. Then a swivel peeler, a scale, two wide bowls for the zest and sugar rub (a deep bowl never draws the oil out of the peel at the bottom), a fine strainer, plain heavy 8 oz tumblers and nothing else — one glass shape for the whole list, because every extra shape is another rack to pack at midnight — and an ice jacket or cool box for the keg to live in once the bar is struck at eleven

A lot of oranges and a few lemons, for both zest and juice, superfine sugar, fine sea salt, orange bitters, dry cider at 4 to 6 percent (perry instead is softer and more floral and wants 2 oz less sugar in the cordial, for the zero-proof version on the adjacent tap, unfiltered apple juice cut with strong cold black tea, the tea doing the tannin job the cider was doing), apple brandy or Calvados (a bonded rye at 700 ml makes a different drink on the same frame, held together by the bitter orange), and cold water — 2¼ quarts of it, which is the dilution and is not optional

Magic
There is no garnish at this bar and there cannot be one at seven pours a minute, which means 300 glasses go out with nothing to smell. Put the aroma in the keg instead. Weigh out ½ oz of a citrus-forward hop — Citra or Nelson Sauvin, from any homebrew supplier — tie it in cheesecloth, drop it into the cold base for eight hours before you carbonate, then pull it out. Cold contact takes the grapefruit and passionfruit oils and almost none of the bitterness, so every glass arrives smelling like the peel you never had time to cut, and the faint resinous grip it leaves stops a cider-and-cordial drink from going soft by the second one. Do not leave it in past about twelve hours or it turns grassy, and take it out before the gas goes on. No hops in the building? Return a double handful of the spent orange peel from the cordial to the cold base for two hours and fish it out — quieter, and free.

Before you begin
Chill to 39°F before the gas, not after. This is the step people skip and it is the whole result: a base carbonated warm will be flat within the hour no matter what pressure you used. Then 30 psi, agitate for 30 seconds, leave it on gas at that pressure at least two hours and preferably overnight, and vent down to about 12 psi before the first pour or you will be serving foam. Taste the batch flat, and leave it a shade sharper than you think you want, because carbonation reads sweeter and rounder than a still liquid. Do not pour a tray of these and walk it anywhere — a poured glass holds condition for about twenty minutes and this is a pour-at-the-handover drink. Do not scale the apple brandy up either: at 10 percent of the volume this is a 5 to 6 percent session drink, which is the entire design requirement at an evening running four hours. And once a keg has been opened and vented several times it fades quickly, so work out before the night where it goes after eleven.

Above about eighty guests, the drink that matters is not the interesting one, it is the one that clears a line. A bartender working a shaker produces roughly one drink a minute; a tap produces seven. That difference is the difference between a bar and a bottleneck, and at an evening run against a load-out schedule the bar cannot be the thing that makes the room late.

The thing that decides whether it works is carbonation, and specifically that the base is properly cold before the gas goes in. Carbon dioxide dissolves far more readily in cold liquid than in warm — the difference between 39°F and 54°F is large enough to be the whole result — so a base carbonated at room temperature will be flat within an hour no matter what pressure you used. Chill overnight, carbonate cold, keep it cold.

Yield and timing

  • Yield: 2½ gallons, about 66 servings of 5 oz. Written for 300 guests at roughly 1.5 drinks each — seven batches, or one 5-gallon keg run twice.

Ingredients

The bitter orange cordial (makes about 3¾ cups)

  • Pared zest of 8 oranges and 2 lemons, no pith
  • 10 oz superfine sugar (about 1½ cups — weigh it)
  • 1⅔ cups fresh orange juice
  • ⅔ cup fresh lemon juice
  • ¾ teaspoon fine sea salt
  • 4 teaspoons orange bitters

The batch (2½ gallons)

  • 6 quarts dry cider, 4–6% ABV
  • 3¾ cups bitter orange cordial, above
  • 1 quart apple brandy or calvados
  • 2 quarts cold water

Glass, ice and garnish

  • Glass: a plain heavy tumbler, 8 oz, poured to about 5 oz. One glass shape for the whole list is a deliberate decision: every extra shape is another rack to pack at midnight.
  • Ice: none. The keg is the chiller.
  • Garnish: none at the tap. At 400 guests a garnish is twenty minutes of somebody’s evening and it ends up on the deck.

Method

  1. Make the cordial: rub the zest and the sugar together with your hands for a minute and leave for two hours. The sugar goes wet and the room smells of orange. Add the juices, the salt and the bitters, stir until no grains remain, and strain out the peel.
  2. Combine everything for the batch in a clean keg or a large sealed vessel. Taste it. It should be a touch sharper than you want, because carbonation reads as slightly sweeter and rounder than a flat liquid does.
  3. Chill overnight to 39°F or below. This step is not optional and it is the one people skip.
  4. Carbonate: seal the keg, set the regulator to about 30 psi, agitate for 30 seconds, and leave it on gas at that pressure for at least two hours — overnight is better. Vent and reset to serving pressure, around 12 psi, before you pour. If you are not kegging, batch the base at 8 quarts instead of 10 and top each glass with 1⅜ oz of soda water at the pour; it is not as good and it works.
  5. Pour into a chilled tumbler with nothing in it. Eight seconds a glass.

Make-ahead

The cordial keeps a week refrigerated and freezes for three months.

The uncarbonated base keeps five days refrigerated.

Carbonated and sealed in a keg, it holds two days without losing noticeable condition. Once a keg has been opened and vented several times, it drops away quickly.

Holding and service

On tap, out of a cold keg, it is consistent all night, which is its entire virtue.

In a glass it holds its carbonation for about 20 minutes in a warm room. Do not pour a tray of these and walk them across a stage; pour at the point of handing over.

At hour three, provided the keg is still cold, it is identical to hour one. Keep the keg in ice or in a cooled jacket, and remember that the bar is being struck at eleven, so plan where the keg goes for the last ninety minutes — a single small station in the wings with a picnic keg on it is the usual answer.

Batching, dilution and throughput

The recipe above is the batch. The dilution is already in it as the 2 quarts of water, which brings a 6 percent cider and a 40 percent brandy down to roughly 5 percent in the glass.

Throughput. Eight seconds a pour on a single tap is seven a minute, 420 an hour. Two taps clear a three-hundred-guest arrival in about fifteen minutes. Nothing else on this list comes close, which is why it exists.

Scaling

Scales by the keg. Two 5-gallon kegs cover 260 servings, which is the practical ceiling for a single tap; above that you need two taps rather than one bigger keg, because the constraint is pour rate, not volume.

The cordial scales linearly to about 3 quarts, at which point the peel rub needs two bowls; a deep bowl does not draw oil from the peel at the bottom.

The apple brandy is the thing not to scale up. At 10 percent of the volume it is a session drink at roughly 5 or 6 percent; more than that and it stops being something people can drink two of across four hours, which at this evening is the whole design requirement.

Substitutions that keep the idea

  • The zero-proof version, which should be on the same tap or an adjacent one: replace the cider with 6 quarts of unfiltered apple juice cut with 1 quart of strong cold black tea, drop the apple brandy entirely, cut the cordial to 2¾ cups and add 4 teaspoons more saline. The tea is doing the tannin job the cider was doing and it is not a token swap.
  • No apple brandy: use a bonded rye and cut it to 2¾ cups. Different drink, same architecture, and the bitter orange holds it together.
  • Perry instead of cider: softer, more floral, and it wants ¼ cup less sugar in the cordial.
