Y2K, After the Upgrade: A Chrome Cocktail Party With Better Taste and Faster Service

The era got the structure of a party right and the temperature of it wrong. Keep the first part. Here is the menu, the numbers for ten, and the five drinks.

The upgrade is not the drink. The drink is the easy part and it has already been handled elsewhere. What is worth arguing about is that parties in 2001 were structurally better than they get credit for, and they failed on two specific things, both of which were equipment problems rather than taste problems.

What that era actually got right

The music was on a disc somebody burned. It ran seventy-four minutes. When it stopped, a human being had to cross the room and decide what happened next, and in crossing the room they looked at the food, noticed the ice was low, and refilled something. That was a running order. Nobody called it one and nobody wrote it down, but a party with a mandatory seventy-four-minute check-in is a party that gets checked in on. I have not found a better mechanism since and I have stopped looking.

The food was also right, in the sense that it was small, salty, room-temperature-tolerant, and available in quantity. Nobody was plating. Everything sat out and got picked at, which is what a standing room wants.

What it got wrong

Sweetness was being used as a solvent. The spirits available at a house party were harsh, and sugar was the cheapest way to make them go down, so the drink arrived at the far end of sweet and then a second sweet mixer was added on top of it. That is a bar problem, not a preference.

And the ice came out of a plastic tray that had been in the freezer since a previous tenant, so it tasted faintly of freezer, and there was never more than one tray’s worth. Everything was cold on arrival and warm by minute six. Fix the ice and half of the upgrade is done before you open a bottle.

The shape of the night, for ten

Three movements, not five, because this is a shorter and louder party than a mid-century one and pretending otherwise produces a lull at nine.

First, a long stretch of standing. Doors at seven. Dial-Up Martini and Crystal Clear Away Message go out together on the same tray in glasses of similar shape, which is the entire point of having built them as a pair. Food out already: crispy rice squares with a sharp dipping sauce, and the truffled pizza-roll tartlets, which are a joke that turns out to be genuinely good and are the first thing to disappear every time.

Second, the hot pass, around 8:45. Chicken lollipops, fried or roasted hard, and beet croquettes for the same plate. This is the only cooking that happens after guests arrive and it is one oven cycle. The bar switches over now: Chrome Flip Phone for anyone who wants something short and dry, Neon Screensaver for anyone who wants something long, which by nine is most of the room.

Third, after eleven, the party contracts. Fewer people, one tray, low light. Afterparty Download is poured over a single large cube with tamarind short-rib toasts and espresso truffles, and nothing else is offered for the rest of the night.

The line

Made ahead, without exception: every drink base, the tamarind syrup, the hibiscus tea, the apple cordial, the lychee clarification, the croquettes shaped and chilled, the short rib braised and sliced, the tartlets assembled on their sheet pan.

Last-minute, and short enough to hold in your head: yuzu goes in at service because it fades into flatness rather than sourness and you will not catch it; tonic and sparkling water at the glass, from small bottles, never a two-liter; apple slices cut late or they brown while looking otherwise correct; and the pizza-roll tartlets and chicken go in the oven at 8:30 together.

Numbers

Ten people, five hours. Twenty-six drinks, which sounds low and is not — two of these are alcohol-free and people drink more of them, not fewer. One bottle of gin, one of vodka, one of rye, a half bottle of dry vermouth opened that week and not before. Twenty pounds of ice, and buy it rather than making it, because a home freezer will not produce twenty pounds and the tray taste is real.

Food: twelve pieces per person, so about a hundred and twenty. Thirty tartlets, twenty-four chicken lollipops, thirty rice squares, twenty croquettes, sixteen short-rib toasts, twenty truffles. The tartlets are the only item to double.

How it ends

The exit is built into the third movement. Once the single tray goes out after eleven, nothing replaces it when it empties. Water and the decaf version of the cold brew go out at the same time as the last drink, in plain sight, so that a guest who is finished has somewhere to put their attention. Then the host sits down. A seated host ends a party faster than any announcement, and nobody has to be told anything.

The five drinks

Buy the ice, open the vermouth that week, and stop apologizing for the spirits with sugar. Everything else about 2001 was structurally correct. It just needed a bar that had grown up and a freezer that had met this century.
